Buttermilk Potato Soup
Oh, how I love the holidays!!
I just put up Christmas today (haters gunna hate) and I can feel my level of joy increase 100%!
Not only have I been preppin’ the house, I am preppin’ my pantry.
Making sure I have oodles of butter for my favorite festive foods - so that also means I have lots of buttermilk.
One of my favorite creations I conjured was Buttermilk Potato Soup.
K. I’m going to level with y’all right now…
I am the person that doesn’t measure when I cook. te-he!
So all I can say is ENJOY :D
This soup was sooo delicous. It had depth to the flavor.
Bonus —-> My whole family loved it!
So very simple.
-With your excess buttermilk pour into pot of choice OR slow cooker. (you can also add raw milk if you don’t have very much buttermilk)
-Raw cream
-Add golden potatoes (chopped on the smaller side)
-Carrots
-Celery
-Onions
-Garlic (minced)
-Add a little flour if you want it thicker! (I don’t mind it without the flour)
Add everything to the pot (after chopped) and keep it on low for 6-8hrs. This means throw it together in the morning and it’ll be ready for dinner!
*Don’t do what I did! I let it cook over night and it cooked waaaayyy too long. So be sure to stir and check it every hour.
I seasoned with salt, basil and turmeric.
I love using veggies that I have on hand, so be creative and add what you got!
xoxo - Tasha
PS…do tell me, which type of chef are you? Exact measurements - or go by how it smells while you cook?
