Creamy Chicken Dinner

Do you ever crave a yummy creamy dinner but don’t want to buy a can of ‘cream of chicken’??

I haven’t bought any for years because it just grossed me out.

It’s thick squish consistency and unknown chunks of, well no one quite knows! LOL and ewww.

Yet growing up those familiar dishes were my favorite.

Well I found a solution!

Cottage cheese.

So I blended up a 24 oz or whatever the bigger container is and added a pint of our fresh cream.

YUM.

It made such a beautiful consistency and the flavor was great.

And from there I seasoned according to my families likes.

So simple and so much better!

No, my cottage cheese wasn’t homemade.

If your up for it, definitely make your own!

I gotta pick my battles and somethings are just not on my lists of to do.

But please let me know if you do make your own cottage cheese cuz I need lots of tips :)

Once you have your base you can literally add it to whatever variety you want to make.

Add to potatoes to make a healthy version of funeral potatoes.

My choice was with 4lbs of cooked shredded chicken on top of brown rice.

Then I added veggies to give it color.

Season with garlic, onion, salt and pepper.

A dash of parsley and basil…mmmmm

Delish.

For those of you who need measurements (I used to be one) here ya go!

Creamy Sauce:

1 - 24oz Cottage Cheese

1 - pint Harmony Homestead Raw Cream

  • Blend two together

Add to 3-4 pounds cooked shredded chicken breasts

Warm on stove

Season to taste! (garlic, onion, salt, pepper, etc.)

You can eat this creamy goodness on top of brown rice, whole wheat pastas, veggies or sourdough bread! Options are endless!

This is such a quick simple meal that is made from scratch.

My hubby and I have made little financial adjustments to save money - one being to eat out minimally.

So instead of eating out each week for date night, we have a delicious homemade meal before we go.

It helps our bodies, and our bank account.
