Homemade Crust & Triple Apple Pie Recipe
Are pies a big deal for you during the holidays? They definitely are in our home! We enjoy pie for days and days after a feast. It’s actually a breakfast favorite with raw milk in a bowl! Yummo.
I started making pies with my mother when I moved to Utah at age 15.
It became a favorite tradition for the holidays!
It’s such a boost of confidence to say “I made that” not in a showy way. Just a very back-to-basics, turn your hearts to your ancestors kinda good mood boost!
Here are my favorite recipes–
Pie Crust:
8 Tablespoons of cold homemade butter (I dice it into chunks roughly 1 Tablespoon each)
1 1/4 cups Einkorn flour (or flour of choice)
If you choose to do whole wheat…don’t chill your butter.
Mix it all together by hand– getting the butter well integrated. It’ll be tiny little pebbles of flour by the time you’re done.
Add 3-4 Tablespoons of cold water and mix gently. Don’t over-mix.
You want a well-blended consistency that holds together in a ball. Split into two smaller balls and squish flat like a pancake.
I saran wrap over each to keep it moist then set aside.
Now for my Triple Apple Pie Recipe: It’s so simple.
•5-6 cups of apples thinly sliced & peeled. (The more variety of apples the more exciting the flavor! Be sure to have a couple of Granny Smiths in there!)
Add
•1 cup sugar or honey
•1/4 cup apple juice or cider
•1/3 cup jam (any kind!)
•3 Tablespoons flour
•pinch of salt
•1 Tablespoon quick-cooking tapioca (dry)
•2 tsp cinnamon…or more lol
And mix!
Roll out your two pie crusts…one for the bottom and one to go on top.
If you want a lattice top just watch a quick YouTube. It’s very simple and gives a very elegant look to your pie! You’ll receive compliments galore!!
If you don’t want lattice just lay your second pie crust right on top and do three little slits on the center. You can see the two pictures of those styles I’ve done.
